  • 1 large egg, beaten
  • 2 tablespoons finely chopped green onions
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon freshly ground black pepper
  • Vegetable oil for frying (use a neutral oil like canola)

Instructions

  1. In a mixing bowl, combine corn kernels, shredded cheese, all-purpose flour, 1/2 cup of breadcrumbs, beaten egg, green onions, garlic powder, paprika, salt, and black pepper. Mix until everything is well combined.
  2. Scoop out small portions of the mixture (about 1 tablespoon each) and shape them into balls using your hands. If the mixture is too sticky, lightly dust your hands with flour.
  3. Roll each ball in the remaining breadcrumbs to create a crispy outer layer. Press gently to ensure the crumbs stick well.
  4. In a skillet or deep fryer, heat vegetable oil over medium heat until it reaches about 350°F (175°C). If you don’t have a thermometer, drop a breadcrumb into the oil—it should sizzle immediately.
  5. Carefully place the coated bites into the hot oil, a few at a time. Fry for 2-3 minutes per side or until they’re golden brown and crispy.
  6. Use a slotted spoon to transfer the bites to a plate lined with paper towels. Let them cool slightly before serving.

Notes

For a healthier option, bake the bites at 400°F (200°C) for 15-20 minutes, flipping halfway through. You can also prepare the mixture ahead of time and refrigerate for up to 6 hours before frying.
