- 2 cups fresh or frozen cranberries
- 2 medium apples, peeled, cored, and diced
- 1 medium onion, finely chopped
- 1/2 cup granulated sugar
- 1/3 cup apple cider vinegar
- 1 tablespoon curry powder
- 1 tablespoon freshly grated ginger
- 1/2 teaspoon salt
- 1/3 cup water
Instructions
- Wash the cranberries and apples. Peel, core, and dice the apples into small cubes. Finely chop the onion and grate the ginger.
- In a medium saucepan, combine the cranberries, diced apples, chopped onion, sugar, apple cider vinegar, curry powder, grated ginger, and salt. Add 1/3 cup of water to the mixture.
- Place the saucepan over medium heat and bring the mixture to a gentle boil. Reduce the heat to low and let it simmer for 20-25 minutes, stirring occasionally, until the cranberries have burst and the apples are tender.
- Taste the chutney and adjust the sugar, salt, or vinegar to suit your preference. If you want a thicker consistency, let it simmer for an additional 5-10 minutes, stirring frequently.
- Remove the chutney from heat and let it cool to room temperature. Transfer it to an airtight container and refrigerate for at least 2 hours for the flavors to meld together.
