A tangy and sweet cranberry apple chutney with warm curry spices, perfect for holiday meals, sandwiches, or as a versatile condiment.

- 2 cups fresh cranberries (or frozen if fresh aren’t available)
- 2 cups apples, peeled and diced (Granny Smith or Honeycrisp recommended)
- 1 medium onion, finely chopped
- 1/2 cup brown sugar
- 1/4 cup apple cider vinegar
- 1 tablespoon curry powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon salt
- 1/2 cup water
Instructions
- Peel and dice the apples, chop the onion finely, and measure out all the spices and sugar.
- Heat a medium saucepan over medium heat and add a splash of water or a tiny drizzle of oil. Add the chopped onion and sauté until softened, about 3-4 minutes.
- Stir in the diced apples and cook for another 2-3 minutes, until they start to soften.
- Toss in the cranberries and stir to combine. If using frozen cranberries, no need to thaw them beforehand.
- Sprinkle in the curry powder, cinnamon, ginger, and salt. Stir well to coat the fruit and onions with the spices.
- Pour in the brown sugar and apple cider vinegar, stirring to dissolve the sugar. Add the water to help the chutney simmer.
- Bring the mixture to a gentle boil, then reduce the heat to low. Let it simmer uncovered for 15-20 minutes, stirring occasionally, until the cranberries burst and the chutney thickens.
- Taste the chutney and adjust the sweetness, salt, or spice level if needed. If it’s too thick, add a splash of water to loosen it.
- Let the chutney cool completely before transferring it to jars or serving. It will thicken even more as it cools.
