  • 4 large egg whites, room temperature

  • 1/2 teaspoon cream of tartar
  • 1 teaspoon vanilla extract
  • 2 cups heavy cream, chilled
  • 2 tablespoons powdered sugar (optional)
  • Fresh cranberries or mint leaves (for garnish)

Instructions

  1. Combine cranberries, sugar, orange juice, and zest in a medium saucepan. Cook over medium heat, stirring occasionally, until cranberries burst and mixture thickens, about 10-12 minutes. Let cool completely.
  2. Preheat oven to 225°F and line a baking sheet with parchment paper. Whisk egg whites and cream of tartar with an electric mixer until soft peaks form. Gradually add sugar, one tablespoon at a time, and continue beating until stiff peaks form. Fold in vanilla extract.
  3. Spoon or pipe dollops of meringue onto the baking sheet. Bake for 1.5 to 2 hours until crisp and dry. Turn off oven and let cool completely inside. Break meringues into bite-sized pieces.
  4. Whip heavy cream with powdered sugar (if using) in a chilled bowl until soft peaks form. Avoid overwhipping.
