Ingredients
- Peel and core of 1 ripe pineapple
- 1 cup fresh cranberries
- 1 cup brown sugar
- 2 cinnamon sticks
- 4–5 cloves
- 8 cups filtered water
Instructions
- Wash the pineapple thoroughly and cut off the top and bottom. Slice off the rind and core.
- Rinse the cranberries under cold water.
- Place the pineapple peel, core, and cranberries into a large glass jar. Add the cinnamon sticks and cloves.
- Sprinkle the brown sugar over the ingredients in the jar.
- Pour 8 cups of filtered water into the jar, ensuring all ingredients are submerged. Stir gently with a wooden spoon to dissolve the sugar.
- Cover the jar with a cheesecloth or clean kitchen towel and secure it with a rubber band or twine. Place the jar in a warm, dark spot and let it ferment for 2-3 days. Check daily to ensure everything is submerged.
- After fermentation, strain the liquid into a clean container using a fine mesh strainer. Discard the solids or compost them.
- Chill the cranberry tepache for a few hours before serving. Pour over ice and garnish with fresh cranberries or a slice of pineapple.
