  • 1 cup fresh cranberries
  • 1 cup brown sugar
  • 2 cinnamon sticks
  • 45 cloves
  • 8 cups filtered water

Instructions

  1. Wash the pineapple thoroughly and cut off the top and bottom. Slice off the rind and core.
  2. Rinse the cranberries under cold water.
  3. Place the pineapple peel, core, and cranberries into a large glass jar. Add the cinnamon sticks and cloves.
  4. Sprinkle the brown sugar over the ingredients in the jar.
  5. Pour 8 cups of filtered water into the jar, ensuring all ingredients are submerged. Stir gently with a wooden spoon to dissolve the sugar.
  6. Cover the jar with a cheesecloth or clean kitchen towel and secure it with a rubber band or twine. Place the jar in a warm, dark spot and let it ferment for 2-3 days. Check daily to ensure everything is submerged.
  7. After fermentation, strain the liquid into a clean container using a fine mesh strainer. Discard the solids or compost them.
  8. Chill the cranberry tepache for a few hours before serving. Pour over ice and garnish with fresh cranberries or a slice of pineapple.
