- 2 lbs boneless, skinless chicken thighs
- 1 can (20 oz) pineapple chunks in juice
- 1 cup pineapple juice
- 1/3 cup brown sugar
- 1/3 cup soy sauce
- 2 minced garlic cloves
- 1 tsp ground ginger
- 2 tbsp cornstarch (optional)
- 2 tbsp water (optional)
- Chopped green onions (for garnish)
Instructions
- Trim excess fat from chicken thighs and season lightly with salt and pepper.
- Place chicken thighs in the crockpot in an even layer.
- In a bowl, whisk together pineapple juice, brown sugar, soy sauce, minced garlic, and ground ginger until combined.
- Pour the sauce mixture over the chicken, ensuring it’s coated evenly.
- Add pineapple chunks on top of the chicken.
- Cover and cook on low for 6 hours or high for 3-4 hours, until the chicken is tender and fully cooked.
- If a thicker sauce is desired, remove the chicken and stir in cornstarch mixed with water. Cook on high for another 15 minutes.
- Serve the chicken over steamed rice or noodles, garnishing with chopped green onions.
Notes
For a thicker sauce, use a cornstarch slurry. Prep ingredients the night before for convenience. Avoid overcooking the chicken to keep it tender.
