Ingredients

  • 2 lbs boneless, skinless chicken thighs
  • 1 can (20 oz) pineapple chunks in juice
  • 1 cup pineapple juice
  • 1/3 cup brown sugar
  • 1/3 cup soy sauce
  • 2 minced garlic cloves
  • 1 tsp ground ginger
  • 2 tbsp cornstarch (optional)
  • 2 tbsp water (optional)
  • Chopped green onions (for garnish)

Instructions

  1. Trim excess fat from chicken thighs and season lightly with salt and pepper.
  2. Place chicken thighs in the crockpot in an even layer.
  3. In a bowl, whisk together pineapple juice, brown sugar, soy sauce, minced garlic, and ground ginger until combined.
  4. Pour the sauce mixture over the chicken, ensuring it’s coated evenly.
  5. Add pineapple chunks on top of the chicken.
  6. Cover and cook on low for 6 hours or high for 3-4 hours, until the chicken is tender and fully cooked.
  7. If a thicker sauce is desired, remove the chicken and stir in cornstarch mixed with water. Cook on high for another 15 minutes.
  8. Serve the chicken over steamed rice or noodles, garnishing with chopped green onions.

Notes

For a thicker sauce, use a cornstarch slurry. Prep ingredients the night before for convenience. Avoid overcooking the chicken to keep it tender.
