- 1 cup (90g) old-fashioned oats
- 1 cup (240ml) warm water
- 2 tablespoons (30ml) honey
- 1 packet (2 ¼ tsp or 7g) active dry yeast
- ¾ cup (180ml) warm water
- 1 teaspoon (5g) salt
- ½ teaspoon (1g) cinnamon
- 3 cups (375g) all-purpose flour
- 4 tablespoons (60g) softened unsalted butter
- 2 tablespoons (30ml) maple syrup
Instructions
- Combine 1 cup of old-fashioned oats with 1 cup of warm water in a bowl and let it sit for 10-15 minutes until the oats soften.
- Mix 2 tablespoons of honey with 1 packet of active dry yeast and ¾ cup of warm water in another bowl. Let it sit for 5 minutes until frothy.
- Add the soaked oats, 1 teaspoon of salt, and ½ teaspoon of cinnamon to the yeast mixture. Stir to combine.
- Gradually add 3 cups of all-purpose flour, 1 cup at a time, mixing until a soft dough forms. Knead for 8-10 minutes until the dough is smooth and elastic.
- Place the dough in a lightly greased bowl, cover with a damp kitchen towel, and let it rise in a warm place for 1 hour or until doubled in size.
- Preheat your oven to 375°F (190°C). Grease a 9×5-inch loaf pan.
- Punch down the dough and shape it into a loaf. Place it in the prepared pan, cover, and let it rise for another 30 minutes.
- Bake the bread for 30-35 minutes or until golden brown and sounds hollow when tapped. Remove from the oven and let it cool in the pan for 10 minutes before transferring to a wire rack.
- Prepare the maple butter by combining 4 tablespoons of softened unsalted butter with 2 tablespoons of maple syrup. Mix until smooth.
- Slice the bread, spread maple butter on top, and enjoy!
Notes
If your dough is sticky, sprinkle a little extra flour while kneading. Test the bread’s doneness by tapping the bottom—it should sound hollow. Let the bread cool for at least 10 minutes before slicing.
