  • 4 ounces cream cheese, softened
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 1 tablespoon freshly squeezed lemon juice
  • 1 small clove garlic, minced
  • 2 tablespoons shelled pistachios, roughly chopped
  • Fresh herbs (thyme or parsley, optional)

Instructions

  1. Take cream cheese out of the fridge about 30 minutes before starting to let it soften. Chop pistachios and mince garlic.
  2. In a food processor, combine feta, cream cheese, olive oil, and lemon juice. Blend for 1-2 minutes, stopping to scrape down the sides, until smooth and creamy.
  3. Add minced garlic and blend for another 30 seconds. Taste and adjust—add more lemon juice if desired.
  4. Spoon whipped feta into a shallow bowl or plate. Spread evenly with the back of a spoon to create swirls.
  5. Drizzle honey generously over the whipped feta. Sprinkle with chopped pistachios and fresh herbs if desired.
  6. Serve with crackers, warm pita bread, or fresh veggies. Enjoy immediately!
