- 8 ounces feta cheese (block in brine preferred)
- 4 ounces cream cheese, softened
- 2 tablespoons honey
- 2 tablespoons olive oil
- 1 tablespoon freshly squeezed lemon juice
- 1 small clove garlic, minced
- 2 tablespoons shelled pistachios, roughly chopped
- Fresh herbs (thyme or parsley, optional)
Instructions
- Take cream cheese out of the fridge about 30 minutes before starting to let it soften. Chop pistachios and mince garlic.
- In a food processor, combine feta, cream cheese, olive oil, and lemon juice. Blend for 1-2 minutes, stopping to scrape down the sides, until smooth and creamy.
- Add minced garlic and blend for another 30 seconds. Taste and adjust—add more lemon juice if desired.
- Spoon whipped feta into a shallow bowl or plate. Spread evenly with the back of a spoon to create swirls.
- Drizzle honey generously over the whipped feta. Sprinkle with chopped pistachios and fresh herbs if desired.
- Serve with crackers, warm pita bread, or fresh veggies. Enjoy immediately!
