- 2 large mangoes (about 2 cups), peeled and diced
- 1 cup full-fat coconut milk
- 1 tablespoon lime juice, freshly squeezed
- 2 tablespoons honey or maple syrup (adjust to taste)
- Optional: Shredded coconut for texture and garnish
Instructions
- Peel and dice 2 large mangoes (about 2 cups). If using frozen mango chunks, let them thaw slightly.
- In a blender, combine mangoes, 1 cup of coconut milk, 1 tablespoon of lime juice, and 2 tablespoons of honey or maple syrup. Blend until smooth and creamy.
- Taste the mixture and adjust sweetness or lime juice as needed.
- Carefully pour the mixture into popsicle molds, filling each about ¾ full. If desired, sprinkle shredded coconut on top.
- Place the lid on the molds and insert wooden sticks. If using DIY molds, cover with foil and pierce the foil with the sticks.
- Transfer the molds to the freezer and freeze for at least 6 hours or overnight for best results.
- Run the molds under warm water for a few seconds to loosen the popsicles. Gently remove and serve immediately.
Notes
For a visual twist, try layering the mango mixture with pure coconut milk for a striped effect. Freeze overnight for the best texture.
