Ingredients

  • 2 large mangoes (about 2 cups), peeled and diced
  • 1 cup full-fat coconut milk
  • 1 tablespoon lime juice, freshly squeezed
  • 2 tablespoons honey or maple syrup (adjust to taste)
  • Optional: Shredded coconut for texture and garnish

Instructions

  1. Peel and dice 2 large mangoes (about 2 cups). If using frozen mango chunks, let them thaw slightly.
  2. In a blender, combine mangoes, 1 cup of coconut milk, 1 tablespoon of lime juice, and 2 tablespoons of honey or maple syrup. Blend until smooth and creamy.
  3. Taste the mixture and adjust sweetness or lime juice as needed.
  4. Carefully pour the mixture into popsicle molds, filling each about ¾ full. If desired, sprinkle shredded coconut on top.
  5. Place the lid on the molds and insert wooden sticks. If using DIY molds, cover with foil and pierce the foil with the sticks.
  6. Transfer the molds to the freezer and freeze for at least 6 hours or overnight for best results.
  7. Run the molds under warm water for a few seconds to loosen the popsicles. Gently remove and serve immediately.

Notes

For a visual twist, try layering the mango mixture with pure coconut milk for a striped effect. Freeze overnight for the best texture.
