Ingredients

  • 23 pounds turkey wings, rinsed and patted dry
  • 1 cup pure maple syrup
  • 1/4 cup bourbon
  • 1/4 cup brown sugar
  • 2 tablespoons unsalted butter
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon apple cider vinegar

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with aluminum foil for easy cleanup.
  2. Pat the turkey wings dry with paper towels and arrange them in a single layer on the prepared baking sheet.
  3. In a small saucepan, combine maple syrup, bourbon, brown sugar, butter, garlic powder, smoked paprika, salt, and black pepper. Heat over medium-low, stirring constantly, until the sugar dissolves and the glaze thickens slightly (about 5 minutes). Remove from heat and stir in apple cider vinegar.
  4. Using a pastry brush, generously coat the turkey wings with the maple-bourbon glaze. Reserve some glaze for basting later.
  5. Place the wings in the oven and bake for 45 minutes. Flip the wings halfway through cooking and brush with more glaze.
  6. Switch your oven to broil for the last 3-5 minutes to caramelize the wings. Keep a close eye to prevent burning.
  7. Let the wings cool for 5 minutes before serving to allow the glaze to set.
