Ingredients

  • 2 cups peeled and cubed pumpkin
  • 3 tablespoons Massaman curry paste
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 lb chicken breast, cut into pieces, or 1 block of firm tofu
  • 1 medium potato, peeled and diced
  • 1 small onion, thinly sliced
  • 1/4 cup roasted and unsalted peanuts, chopped for garnish
  • 1 tablespoon tamarind paste
  • 2 tablespoons fish sauce or soy sauce
  • 1 tablespoon brown sugar
  • 2 tablespoons vegetable oil
  • 1/2 cup water or chicken broth
  • Fresh basil for garnish (optional)

Instructions

  1. Peel and cube the pumpkin, dice the potatoes, and slice the onion. Set aside.
  2. Heat vegetable oil in a large pan over medium heat. Add Massaman curry paste and sauté for 2-3 minutes until fragrant.
  3. Add sliced onion and cook for another 2 minutes to soften.
  4. Add chicken or tofu to the pan and sear for 3-4 minutes.
  5. Pour in the coconut milk and stir well to combine. Let it simmer for 5 minutes.
  6. Add diced pumpkin and potatoes to the pan. Stir to coat them in the curry sauce.
  7. Add tamarind paste, fish sauce or soy sauce, and brown sugar. Stir well and adjust to taste.
  8. Add water or chicken broth and bring the curry to a gentle boil. Lower the heat and let it simmer for 15-20 minutes, or until the pumpkin and potatoes are tender.
  9. Stir in the peanuts and cook for another minute.
  10. Garnish with fresh basil and a sprinkle of chopped peanuts. Serve hot over steamed jasmine rice or noodles.
