- 1 cup (240ml) filtered water
- 1 cup (200g) white granulated sugar
- 1 teaspoon almond extract
- 1 teaspoon orange blossom water
- Pinch of salt
- Optional: 1 tablespoon (15ml) vodka
Instructions
- Toast the Pumpkin Seeds: In a dry skillet over medium heat, toast 1 cup (140g) of raw pumpkin seeds until golden and fragrant, about 5 minutes. Stir frequently to prevent burning.
- Grind the Seeds: Transfer the toasted seeds to a blender or food processor and pulse until they form a coarse meal.
- Simmer the Syrup Base: In a medium saucepan, combine 1 cup (240ml) of water and 1 cup (200g) of granulated sugar. Heat over medium heat, stirring until the sugar dissolves.
- Add the Pumpkin Seed Meal: Stir the ground pumpkin seeds into the syrup and bring to a gentle simmer. Let it cook for 10 minutes, stirring occasionally.
- Strain the Mixture: Remove the saucepan from heat and let it cool slightly. Strain the syrup through a fine mesh strainer or cheesecloth into a clean bowl, pressing down to extract all the liquid.
- Add Flavorings: Stir in 1 teaspoon of almond extract, 1 teaspoon of orange blossom water, and a pinch of salt. If desired, add 1 tablespoon (15ml) of vodka to extend shelf life.
- Store the Syrup: Pour the strained syrup into a clean jar or bottle and seal tightly. Store in the refrigerator for up to 2 weeks. Shake before each use.
