- 1 cup (240 ml) pumpkin puree
- 1/2 cup (120 ml) apple juice or cider
- 1/4 cup (50 g) granulated sugar
- 1 tsp pumpkin pie spice
- 2 cups (480 ml) vegetable oil (chilled in the fridge for at least 1 hour)
- 1/4 cup (60 ml) water
- 2 tsp agar-agar powder
Instructions
- Place vegetable oil in a tall glass or bowl and chill it in the fridge for at least one hour.
- In a small saucepan, whisk together pumpkin puree, apple juice, sugar, and pumpkin pie spice. Heat over medium heat until warm and sugar dissolves (about 3-4 minutes).
- Combine water and agar-agar powder in a separate bowl. Whisk until dissolved, then add this mixture to the pumpkin spice base. Bring to a light simmer, stirring constantly, for 2 minutes.
- Remove the saucepan from heat and let the mixture cool slightly (about 5 minutes). Using a dropper or syringe, carefully drop the mixture into the chilled oil one droplet at a time.
- Pour the oil and caviar mixture through a fine mesh strainer to collect the pearls. Rinse gently under cold water to remove excess oil.
- Serve the Pumpkin Spice Caviar as a garnish or store for later use.
Notes
Ensure the vegetable oil is thoroughly chilled for proper pearl formation. Experiment with flavors by adding extracts or spices. Store caviar submerged in water in the fridge for up to 5 days.
