- 3 1/2 cups (440 g) all-purpose flour
- 1 teaspoon kosher salt
- 2 tablespoons fresh rosemary, finely chopped
- 1 bulb roasted garlic, soft cloves squeezed out
- 1 cup (240 ml) warm whole milk
- 1 tablespoon sugar
- 2 1/4 teaspoons (7 g) instant yeast
- 3 tablespoons (42 g) unsalted butter, softened
- 1 large egg
- Optional: flaky sea salt or shredded Parmesan for topping
Instructions
- Preheat your oven to 400°F (200°C). Slice off the top of a garlic bulb, drizzle with olive oil, wrap in foil, and roast for 40 minutes. Let it cool, then squeeze out the soft cloves.
- Warm 1 cup (240 ml) of milk to around 110°F (43°C). Stir in 1 tablespoon of sugar and 2 1/4 teaspoons (7 g) of instant yeast. Let it sit until foamy, about 5 minutes.
- In a large bowl, combine 3 1/2 cups (440 g) of flour, 1 teaspoon of salt, and chopped rosemary. Add the yeast mixture, roasted garlic cloves, 3 tablespoons (42 g) of softened butter, and one large egg. Mix until a shaggy dough forms.
- Knead the dough on a floured surface for about 8-10 minutes, or until smooth and elastic. If using a stand mixer, knead on medium speed for 5 minutes.
- Place the dough in a greased bowl, cover with a damp towel, and let it rise in a warm spot for 1 hour, or until doubled in size.
- Punch down the dough and divide it into 12 equal pieces. Roll each piece into a ball and arrange them in a greased loaf pan.
- Cover the pan and let the dough rise for another 30-40 minutes, until puffy.
- Preheat oven to 375°F (190°C). Brush the tops with melted butter and bake for 25-30 minutes, or until golden brown.
- Let the bread cool slightly before serving. Enjoy warm for the best flavor!

Roasting garlic transforms its flavor, so don’t skip this step. Use fresh rosemary for the best aroma, and ensure your milk is warm but not too hot to activate the yeast properly.
