  • 200g (7 oz) digestive biscuits, crushed
  • 100g (3.5 oz) unsalted butter, melted
  • 450g (16 oz) cream cheese, softened
  • 200ml (¾ cup) heavy cream
  • 100g (3.5 oz) caster sugar
  • 1 tsp vanilla extract
  • 200g (7 oz) granulated sugar
  • 100ml (⅓ cup) heavy cream
  • 50g (2 oz) unsalted butter
  • ½ tsp sea salt (adjust to taste)

Instructions

  1. Combine the crushed digestive biscuits with melted butter in a mixing bowl. Press the mixture firmly into the bottom of your springform pan to form an even layer. Chill in the fridge for 15 minutes to set.
  2. In a large bowl, beat the cream cheese and caster sugar until smooth. Add vanilla extract and heavy cream, then continue mixing until the filling is thick and creamy. Pour the filling over the chilled base and smooth the top with a spatula. Chill for at least 4 hours or overnight for best results.
  3. Heat the sugar in a saucepan over medium heat, stirring occasionally, until it melts and turns a golden caramel color. Remove from heat and carefully stir in the butter and heavy cream. Add the sea salt and stir until smooth. Let the caramel cool slightly before using.
  4. Once the cheesecake is set, drizzle the cooled salted caramel over the top. Use as much or as little as you like, depending on your preference. Sprinkle a pinch of sea salt on top for decoration.
  5. Carefully remove the cheesecake from the springform pan, slice, and serve chilled.
