Ingredients

  • 1 cup almonds (whole or slivered)
  • 1 cup walnuts (halved or chopped)
  • 1 cup pecans
  • 1/2 cup dried cranberries
  • 1/2 cup dried apricots (chopped)
  • 1/2 cup dark chocolate chunks (optional)
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ground ginger
  • Pinch of ground cloves
  • Pinch of sea salt
  • 2 tablespoons olive oil
  • 2 tablespoons honey or maple syrup

Instructions

  1. Preheat your oven to 350°F (175°C). Spread the pumpkin seeds, almonds, walnuts, and pecans evenly on a baking sheet. Bake for 8-10 minutes, stirring halfway through, until lightly toasted and aromatic.
  2. In a small bowl, combine cinnamon, nutmeg, ground ginger, ground cloves, and sea salt.
  3. Transfer the toasted nuts and seeds to a large mixing bowl. Drizzle olive oil and honey or maple syrup over them. Sprinkle the pumpkin spice mixture evenly and toss until well coated.
  4. Spread the spiced nuts and seeds back onto the baking sheet and let them cool completely.
  5. Once cooled, stir in dried cranberries, chopped dried apricots, and dark chocolate chunks (if using). Adjust quantities to taste.
  6. Transfer the trail mix to an airtight container. It will stay fresh for up to two weeks at room temperature.
