Instructions
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Wash and dry the sweet potatoes. Peel them if desired, then slice them into thin rounds (about 1/8-inch thick) using a sharp knife or mandoline.
- Place the slices in a large mixing bowl. Drizzle with olive oil, then sprinkle the curry powder, sea salt, black pepper, and garlic powder over the top.
- Toss until each slice is evenly coated with the oil and seasoning.
- Arrange the slices in a single layer on the prepared baking sheet. Be sure not to overlap them—this helps them crisp up evenly.
- Bake for 20 minutes, then flip the slices over. Bake for an additional 10-15 minutes, or until the edges are golden and crispy.
- Remove from the oven and let cool for 5 minutes before serving. Sprinkle a pinch of extra curry salt on top if desired.
