- 2 Japanese sweet potatoes (purple or orange), roasted and mashed
- 1 cup (240ml) heavy cream
- 4 tablespoons (60g) powdered sugar
- 1 teaspoon vanilla extract
- 2 tablespoons (30g) unsalted butter
- 1 cup (100g) almond flour or ground almonds
- 2 large egg whites
- 1/3 cup (65g) granulated sugar
- Pinch of salt
Instructions
- Preheat your oven to 400°F (200°C). Wash the sweet potatoes and prick them with a fork. Place on a baking sheet and roast for 45-60 minutes until soft.
- While the sweet potatoes cool, preheat the oven to 350°F (175°C). In a mixing bowl, whisk together almond flour, egg whites, granulated sugar, and a pinch of salt. Scoop the mixture onto a lined baking sheet to form small disks, about 2 inches in diameter.
- Bake the bases for 10-12 minutes until lightly golden. Let them cool completely on a wire rack.
- Peel the roasted sweet potatoes and mash until smooth. Push the mashed sweet potato through a fine sieve or strainer into a clean bowl to achieve a silky texture.
- Add unsalted butter, vanilla extract, and powdered sugar to the sweet potato mash. Mix until smooth.
- In a separate bowl, whip heavy cream with powdered sugar until stiff peaks form.
- Place the whipped cream on top of the cooled almond bases, creating a small mound. Fill a piping bag fitted with a star tip with the sweet potato cream and pipe elegant swirls over the whipped cream mound.
- Refrigerate the assembled Mont Blancs for at least 1 hour before serving.
