  • 1 cup light brown sugar, packed (for bourbon sauce)
  • 1/4 cup heavy cream (for bourbon sauce)
  • 1/4 cup bourbon (use maple syrup for a non-alcoholic option)
  • Pinch of salt (for bourbon sauce)

Instructions

  1. Preheat your oven to 400°F (200°C). Wash your sweet potatoes and pierce them with a fork. Place them on a baking sheet and bake for about 45-60 minutes, or until they’re fork-tender. Let them cool slightly, then peel and mash until smooth. Set aside.
  2. In a large mixing bowl, combine the mashed sweet potatoes, eggs, sugar, melted butter, milk, vanilla extract, cinnamon, nutmeg, and salt. Use a hand mixer to beat the mixture until light and fluffy.
  3. Grease a 9×9-inch baking dish with butter or cooking spray. Pour the sweet potato mixture into the dish and smooth out the top with a spatula.
  4. Reduce the oven temperature to 350°F (175°C) and bake the soufflé for 40-45 minutes, or until the edges are set and the center is slightly jiggly.
  5. While the soufflé is baking, melt the butter in a small saucepan over medium heat. Stir in the brown sugar and cook until dissolved. Add the heavy cream and bourbon, then simmer for 3-4 minutes, stirring constantly, until the sauce thickens slightly.
