  • 2 sheets store-bought puff pastry, thawed
  • 2 cups cooked turkey, shredded or thinly sliced
  • 8 oz cream cheese, softened
  • 1 cup shredded cheese (cheddar, mozzarella, or Gruyère)
  • 2 tbsp whole grain mustard (optional)
  • 23 green onions, chopped finely
  • 1 large egg, beaten (for egg wash)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Thaw puff pastry if frozen and lightly roll it out on a floured surface to smooth any creases.
  3. Cut each sheet of puff pastry into 4 equal squares, making 8 pastries total.
  4. In a mixing bowl, combine softened cream cheese, shredded turkey, shredded cheese, mustard, and green onions. Add salt and pepper to taste and mix well.
  5. Spoon about 2 tablespoons of filling onto the center of each square, being careful not to overfill.
  6. Fold the corners of each square over the filling to meet in the center, creating a pinwheel shape. Press lightly to seal.
  7. Brush the top of each pastry with beaten egg for a golden finish.
  8. Place the pastries on the prepared baking sheet and bake for 20–25 minutes, or until puffed and golden brown.
  9. Allow the pastries to cool slightly before serving. Best enjoyed warm!
