Instructions

  1. Collect the drippings: After roasting your turkey, carefully pour the drippings from the pan into a heatproof bowl. Skim off excess fat, leaving about 1/4 cup for the gravy.
  2. Make the roux: In a large sauté pan, melt 4 tablespoons (56g) of unsalted butter over medium heat. Sprinkle in 4 tablespoons (30g) of all-purpose flour and whisk continuously for 2-3 minutes until golden and fragrant.
  3. Add the stock: Gradually pour in 2 cups (480ml) of chicken or turkey stock, whisking constantly to avoid lumps. Let it simmer for 5 minutes.
  4. Incorporate the drippings: Slowly add the reserved turkey drippings, whisking to combine. Simmer for another 10 minutes, stirring occasionally.
  5. Season and reduce: Add 1 teaspoon of salt, 1/2 teaspoon of black pepper, and a sprig each of thyme and rosemary. Continue simmering for 5-7 minutes until the gravy thickens and coats the back of a spoon.
