Description

  • 3 cups (375 g) all-purpose flour
  • 1 tsp salt
  • 1 tsp sugar
  • 1 packet (2 1/4 tsp) instant yeast
  • 3/4 cup (180 mL) warm water
  • 2 tbsp olive oil
  • 1 tbsp olive oil
  • 1 medium onion, finely chopped
  • 1 lb (450 g) ground turkey
  • 2 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp ground coriander
  • 1/2 tsp red pepper flakes (optional)
  • 1/4 cup (60 g) tomato paste
  • 1/4 cup (60 mL) water
  • Salt and pepper to taste
  • 1 cup (100 g) shredded mozzarella cheese
  • 4 large eggs
  • Fresh parsley, chopped (for garnish)
  • Optional: Sesame seeds for crust

Instructions

  1. In a large bowl, mix the flour, salt, sugar, and yeast. Slowly add warm water and olive oil. Knead the dough for about 8-10 minutes until smooth and elastic. Cover and let it rise for 1 hour or until doubled in size.
  2. Heat olive oil in a skillet over medium heat. Add the onions and sauté until soft. Stir in the ground turkey, breaking it up as it cooks. Add garlic, cumin, paprika, coriander, red pepper flakes (if using), tomato paste, and water. Cook for 5-7 minutes, seasoning with salt and pepper to taste.
  3. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  4. Once the dough has risen, divide it into 4 equal portions. Roll each portion into an oval shape about 10 inches (25 cm) long. Place on the prepared baking sheet.
  5. Spoon the turkey filling evenly over each dough oval, leaving a border around the edges. Sprinkle shredded cheese on top. Fold the edges inward to create a boat shape, pinching the ends to seal.
  6. Crack one egg into the center of each pide. The heat will cook the egg while baking.
  7. Bake the pide for 12-15 minutes, or until the crust is golden and the egg whites are set but the yolks remain runny.
  8. Remove from the oven, sprinkle with fresh parsley, and serve immediately.
