Description

Ingredients

  • 1 ½ cups graham cracker crumbs
  • 6 tbsp unsalted butter, melted
  • 2 tbsp granulated sugar
  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs, room temperature
  • 1 tsp pure vanilla extract
  • ½ cup sour cream
  • 1 cup fresh or frozen cranberries
  • ½ cup granulated sugar
  • ½ cup water
  • ½ cup white chocolate chips
  • 1 tsp coconut oil (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line your baking pan with parchment paper.
  2. Combine graham cracker crumbs, melted butter, and sugar in a mixing bowl. Press the mixture firmly into the bottom of the prepared pan to create an even crust. Bake for 8 minutes and let cool.
  3. In a small saucepan, combine cranberries, sugar, and water. Bring to a boil, then reduce heat and simmer for 10 minutes, stirring occasionally. Let it cool slightly.
  4. In a large mixing bowl, beat the softened cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and sour cream until fully combined.
  5. Pour the cheesecake filling over the cooled crust. Dollop spoonfuls of cranberry sauce on top and use a toothpick or knife to create swirls.
  6. Bake at 350°F (175°C) for 40–45 minutes, or until the center is set but still slightly jiggly. Remove from the oven and let cool to room temperature, then refrigerate for at least 3 hours or overnight.
  7. Melt white chocolate chips with coconut oil in the microwave in 20-second intervals, stirring after each. Drizzle over the chilled bars.
  8. Lift the bars out of the pan using the parchment paper. Slice into squares or rectangles and serve chilled.
