- 1 cup (226g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 1 egg
- 2 tablespoons (30ml) key lime juice
- 1 tablespoon (6g) lime zest
- 2 ¾ cups (345g) all-purpose flour
- 8 ounces (226g) cream cheese, softened
- ½ cup (60g) powdered sugar
- Green food coloring (optional)
Instructions
- In a large bowl, cream together 1 cup (226g) of unsalted butter and 1 cup (200g) of granulated sugar until light and fluffy.
- Add 1 egg, 2 tablespoons (30ml) of key lime juice, and 1 tablespoon (6g) of lime zest. Mix until combined.
- Gradually add 2 ¾ cups (345g) of all-purpose flour and mix just until the dough comes together.
- In a separate bowl, beat 8 ounces (226g) of softened cream cheese with ½ cup (60g) of powdered sugar until smooth. If desired, add a drop of green food coloring for a vibrant swirl.
- Roll out the dough into a rectangle on a floured surface. Spread the cream cheese mixture evenly over the dough.
- Gently roll the dough into a log, starting from one of the long sides. Wrap the log in plastic wrap and refrigerate for at least 1 hour.
- Preheat your oven to 350°F (175°C). Slice the chilled dough into ¼-inch (0.6cm) thick rounds and place them on a lined cookie sheet.
- Bake for 10-12 minutes, or until the edges are just starting to turn golden.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack. Enjoy them warm or at room temperature!
Notes
Chill the dough log well for easier slicing and to help the cookies hold their shape. Use fresh lime juice for the best flavor, and avoid overbaking to keep the cookies soft.
