- 1 cup black beans, rinsed and drained

- 1 ripe avocado, diced

- 1/4 cup shredded cheese
- Fresh cilantro, chopped
- 1/2 cup sour cream or Greek yogurt
- Juice of 1 lime
- 1/2 tsp garlic powder
- Salt to taste
Instructions
- Season the chicken: In a mixing bowl, combine the diced chicken with olive oil, smoked paprika, garlic powder, onion powder, chili powder, cumin, salt, and pepper. Toss until the chicken is evenly coated.
- Cook the chicken: Heat a large skillet over medium-high heat. Add the seasoned chicken and cook for 6-8 minutes, stirring occasionally, until fully cooked and lightly browned. Remove from heat and set aside.
- Prepare the lime crema: In a small bowl, whisk together sour cream, lime juice, garlic powder, and a pinch of salt. Taste and adjust seasoning if needed.
- Assemble the base: In individual serving bowls, add a layer of cooked rice or shredded lettuce as the foundation.
- Add toppings: Layer black beans, corn, cherry tomatoes, avocado, red onion, and shredded cheese over the base. Arrange the cooked chicken on top.
- Drizzle and garnish: Generously drizzle each bowl with lime crema and finish with fresh cilantro if desired.
Notes
For a low-carb option, use cauliflower rice or shredded lettuce as the base. Add avocado and cilantro just before serving to prevent browning.
