- ½ cup (60g) powdered sugar
- 1 teaspoon vanilla extract
- ¼ cup melted butterscotch chips
- Extra butterscotch chips for decoration
Instructions
- Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
- In a bowl, whisk together flour, baking powder, and salt. Set aside.
- In a separate bowl, beat butter and brown sugar until fluffy (about 3 minutes). Add eggs one at a time, mixing well after each.
- Stir in cream soda and vanilla extract.
- Gradually add dry ingredients to wet, mixing until just combined. Don’t overmix!
- Divide batter evenly among cupcake liners, filling each about ¾ full.
- Bake for 18-20 minutes, until a toothpick inserted comes out clean.
- Transfer to a wire rack to cool completely before frosting.
- For frosting: Beat heavy cream, powdered sugar, and vanilla until soft peaks form. Fold in melted butterscotch chips.
- Pipe or spread frosting onto cooled cupcakes. Top with extra butterscotch chips or edible glitter for decoration.
