- 1–2 pounds pork tenderloin, trimmed of excess fat
- 1/4 cup pure maple syrup
- 2 tablespoons Dijon mustard
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 tablespoon apple cider vinegar
- 1 teaspoon fresh thyme, chopped (optional)
- Salt and black pepper, to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a small mixing bowl, whisk together maple syrup, Dijon mustard, olive oil, garlic, apple cider vinegar, thyme (if using), and a pinch of salt and pepper.
- Rub the pork tenderloin generously with salt and black pepper.
- Heat a cast iron skillet over medium-high heat with a drizzle of olive oil. Sear the pork on all sides until golden brown, approximately 2-3 minutes per side.
- Brush half of the marinade over the pork tenderloin, reserving the rest for basting later.
- Transfer the skillet to the preheated oven and roast the pork for 20-25 minutes, or until the internal temperature reaches 145°F (63°C).
- Halfway through roasting, brush the pork with the remaining marinade to create a glossy glaze.
- Remove the tenderloin from the oven and cover loosely with foil. Let it rest for 5-10 minutes.
- Slice the pork into medallions and serve immediately, drizzled with any remaining glaze from the skillet.
Notes
Searing the pork locks in juices and creates a flavorful crust. Use a meat thermometer to ensure the pork is cooked to perfection. Let the pork rest before slicing to retain juices.
