Ingredients

  • 12 pounds pork tenderloin, trimmed of excess fat
  • 1/4 cup pure maple syrup
  • 2 tablespoons Dijon mustard
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon fresh thyme, chopped (optional)
  • Salt and black pepper, to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a small mixing bowl, whisk together maple syrup, Dijon mustard, olive oil, garlic, apple cider vinegar, thyme (if using), and a pinch of salt and pepper.
  3. Rub the pork tenderloin generously with salt and black pepper.
  4. Heat a cast iron skillet over medium-high heat with a drizzle of olive oil. Sear the pork on all sides until golden brown, approximately 2-3 minutes per side.
  5. Brush half of the marinade over the pork tenderloin, reserving the rest for basting later.
  6. Transfer the skillet to the preheated oven and roast the pork for 20-25 minutes, or until the internal temperature reaches 145°F (63°C).
  7. Halfway through roasting, brush the pork with the remaining marinade to create a glossy glaze.
  8. Remove the tenderloin from the oven and cover loosely with foil. Let it rest for 5-10 minutes.
  9. Slice the pork into medallions and serve immediately, drizzled with any remaining glaze from the skillet.

Notes

Searing the pork locks in juices and creates a flavorful crust. Use a meat thermometer to ensure the pork is cooked to perfection. Let the pork rest before slicing to retain juices.
