  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (115g) unsalted butter
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 tablespoons matcha powder
  • Powdered sugar (for rolling)

Instructions

  1. In a medium bowl, whisk together 2 cups (250g) all-purpose flour, 2 teaspoons baking powder, and 1/4 teaspoon salt. Set aside.
  2. In a large bowl, cream 1/2 cup (115g) unsalted butter and 1 cup (200g) granulated sugar until light and fluffy (about 3 minutes).
  3. Add 2 large eggs, one at a time, beating well after each addition. Mix in 1 teaspoon vanilla extract and 1 1/2 tablespoons matcha powder until fully incorporated.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be cautious not to overmix—you want tender cookies!
  5. Cover the dough with plastic wrap and refrigerate for at least 2 hours (or overnight). Chilling helps the cookies hold their shape and develop their crackled appearance.
  6. Preheat your oven to 350°F (180°C). Line baking sheets with parchment paper.
  7. Scoop out tablespoon-sized portions of dough and roll them into balls. Coat each ball generously in powdered sugar.
  8. Place the dough balls on the prepared baking sheets, spacing them about 2 inches apart.
  9. Bake for 10-12 minutes, or until the cookies are set and the tops are crackled. They’ll still be soft in the center.
  10. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Chill the dough thoroughly to prevent spreading and ensure the crackled appearance. Roll the dough generously in powdered sugar for the best effect. Avoid overbaking to keep the cookies soft in the center.
