- For the Choux Pastry:
- 1/2 cup (115g) unsalted butter
- 1 cup (240ml) water
- Pinch of salt
- 1 cup (120g) all-purpose flour
- 4 large eggs, room temperature
- For the Filling:
- 1 cup (240ml) heavy cream, chilled
- 2 tablespoons granulated sugar
- 1 teaspoon vanilla extract
- Powdered sugar for dusting
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a medium saucepan, combine butter, water, and salt. Heat over medium heat until butter melts and mixture begins to boil.
- Reduce heat to low, add flour, and stir vigorously until dough forms a ball and pulls away from sides of pan, about 2-3 minutes.
- Remove from heat and let cool for 5-10 minutes to prevent cooking the eggs.
- Add eggs one at a time, mixing well after each addition until dough is smooth, shiny, and slightly sticky.
- Spoon or pipe dough onto prepared baking sheet, spacing about 2 inches apart.
- Bake for 25-30 minutes until golden brown and puffed. Don’t open oven door during baking!
- While puffs cool, whip heavy cream with sugar and vanilla until soft peaks form. Chill until ready to use.
- Once puffs are completely cool, slice in half and fill with whipped cream.
- Dust with powdered sugar before serving.
Notes
Room temperature eggs are essential for smooth dough. Don’t skip the cooling step before adding eggs. For extra crispy puffs, poke a small hole after baking and return to oven for 5 minutes. Best enjoyed fresh but can be stored in refrigerator for up to 2 days.
