Description

These classic cream puffs feature a crisp, airy shell filled with luscious whipped cream. A treasured family recipe that’s been perfected over decades, they’re surprisingly easy to make and perfect for any occasion!

  • For the Choux Pastry:
  • 1/2 cup (115g) unsalted butter
  • 1 cup (240ml) water
  • Pinch of salt
  • 1 cup (120g) all-purpose flour
  • 4 large eggs, room temperature
  • For the Filling:
  • 1 cup (240ml) heavy cream, chilled
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • Powdered sugar for dusting

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a medium saucepan, combine butter, water, and salt. Heat over medium heat until butter melts and mixture begins to boil.
  3. Reduce heat to low, add flour, and stir vigorously until dough forms a ball and pulls away from sides of pan, about 2-3 minutes.
  4. Remove from heat and let cool for 5-10 minutes to prevent cooking the eggs.
  5. Add eggs one at a time, mixing well after each addition until dough is smooth, shiny, and slightly sticky.
  6. Spoon or pipe dough onto prepared baking sheet, spacing about 2 inches apart.
  7. Bake for 25-30 minutes until golden brown and puffed. Don’t open oven door during baking!
  8. While puffs cool, whip heavy cream with sugar and vanilla until soft peaks form. Chill until ready to use.
  9. Once puffs are completely cool, slice in half and fill with whipped cream.
  10. Dust with powdered sugar before serving.

Notes

Room temperature eggs are essential for smooth dough. Don’t skip the cooling step before adding eggs. For extra crispy puffs, poke a small hole after baking and return to oven for 5 minutes. Best enjoyed fresh but can be stored in refrigerator for up to 2 days.
