These No-Bake Berry Cheesecake Parfaits are a creamy, fruity dessert perfect for summer. Layers of cheesecake, fresh berries, and graham cracker crumbs make this an easy, no-stress treat.

- 1 cup (about 8 crackers) graham crackers, crushed
- 4 tablespoons (60g) melted butter
- 2 tablespoons (25g) sugar
- 1 cup (240ml) heavy cream, whipped to stiff peaks
- 8 ounces (225g) cream cheese, softened
- 1/2 cup (60g) powdered sugar
- 1 teaspoon (5ml) vanilla extract
- 2 cups (300g) mixed berries (strawberries, blueberries, raspberries)
Instructions
- Crush 1 cup of graham crackers into fine crumbs using a food processor or rolling pin. Stir in 4 tablespoons of melted butter and 2 tablespoons of sugar. Set aside.
- In a chilled bowl, whip 1 cup of heavy cream until stiff peaks form. Set aside.
- Beat 8 ounces of softened cream cheese with 1/2 cup of powdered sugar and 1 teaspoon of vanilla extract until smooth. Gently fold in the whipped cream until combined.
- Wash and dry 2 cups of mixed berries. Slice strawberries if using.
- Start with a layer of graham cracker crumbs at the bottom of each glass, followed by a layer of cheesecake mixture, and then a layer of berries. Repeat until the glass is full, ending with berries on top.
- Refrigerate the parfaits for at least 2 hours before serving to allow the flavors to meld.
Notes
To avoid soggy graham crackers, assemble the parfaits just before serving if they’ll sit out for a while. Chill your mixing bowl and beaters before whipping the cream for better results.
