Ingredients

  • 1/2 cup (115g) unsalted butter, softened
  • 1/2 cup (100g) brown sugar
  • 1 cup (250g) peanut butter
  • 1 teaspoon vanilla extract
  • 1 1/4 cups (155g) heat-treated all-purpose flour
  • 1/2 cup (85g) mini chocolate chips
  • 2 cups (350g) chocolate chips or melting chocolate for coating
  • Optional toppings: sprinkles, crushed nuts, or flaky sea salt

Instructions

  1. In a large mixing bowl, cream together 1/2 cup unsalted butter, 1/2 cup brown sugar, and 1 cup peanut butter until smooth.
  2. Add 1 teaspoon vanilla extract and mix well.
  3. Gradually stir in 1 1/4 cups heat-treated all-purpose flour until fully combined. The dough should be soft and slightly sticky.
  4. Fold in 1/2 cup mini chocolate chips.
  5. Chill the dough in the refrigerator for about 30 minutes to make it easier to roll into balls.
  6. Use a cookie scoop or tablespoon to portion the dough. Roll each portion into a ball and place them on a parchment-lined baking sheet.
  7. Freeze the dough balls for 15-20 minutes to firm them up.
  8. Melt 2 cups chocolate chips or melting chocolate in a microwave-safe bowl, stirring every 30 seconds until smooth.
  9. Dip each chilled dough ball into the melted chocolate, ensuring it’s fully coated. Use a fork to lift and let excess chocolate drip off.
  10. Place the coated truffles back on the parchment-lined baking sheet and add toppings if desired.
  11. Refrigerate until the chocolate sets, approximately 15-20 minutes.

Notes

Chill the dough and truffles to ensure they hold their shape during dipping. Add a teaspoon of coconut oil to the melted chocolate for a smoother finish. Store truffles in the fridge for up to a week or freeze for up to three months.
