  • 1 cup honey
  • 1 cup brown sugar (light or dark)
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground cloves (optional)
  • 1 tablespoon Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon salt
  • 1 tablespoon unsalted butter
  • 1/4 cup orange juice (optional)

Instructions

  1. Preheat oven to 325°F (165°C) and position a rack in the lower third.
  2. Remove packaging from ham and place flat side down in a roasting pan. Cover loosely with foil.
  3. Bake for 1 ½ to 2 hours (about 15 minutes per pound) until internal temperature reaches 120°F (49°C).
  4. While ham warms, combine honey, brown sugar, mustard, vinegar, butter, cinnamon, nutmeg, and cloves in a small saucepan. Heat over medium until sugar dissolves and mixture thickens (5–7 minutes). Stir in orange juice if using.
  5. Remove foil and brush a generous layer of glaze over the ham, getting into the slices.
  6. Return ham uncovered to oven and bake for 20–30 minutes, brushing with glaze every 10 minutes until golden and slightly crisp.
  7. Increase oven to 400°F (205°C) for the last 5–10 minutes to caramelize the crust. Watch closely to prevent burning.
  8. Remove from oven and let rest for 15 minutes before slicing and serving.

Notes

Use a bone-in spiral-sliced ham for best flavor and texture. Brush glaze in layers for a crisp crust. If glaze thickens too much, add a tablespoon of water. Make glaze ahead and store refrigerated for up to two days. For a smoky twist, replace half the honey with maple syrup or add a splash of bourbon.
