- 4 salmon fillets (6–8 ounces each, preferably wild-caught)
- 1/2 cup shelled, unsalted pistachios, finely chopped
- 2 tablespoons Dijon mustard
- 1 tablespoon honey
- 2 tablespoons extra virgin olive oil
- 2 cloves garlic, minced
- 1 teaspoon lemon zest
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Pinch of paprika
- Fresh herbs for garnish (parsley or dill)
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Pat the salmon fillets dry with paper towels and place them on the prepared baking sheet. Season lightly with salt and pepper.
- In a small bowl, combine the crushed pistachios, Dijon mustard, honey, olive oil, minced garlic, lemon zest, lemon juice, and a pinch of paprika. Stir until it forms a thick paste.
- Spread the pistachio mixture evenly over the top of each salmon fillet, pressing gently to help it adhere.
- Bake in the preheated oven for 12-20 minutes, depending on the thickness of your fillets. The salmon is done when it flakes easily with a fork and reaches an internal temperature of 145°F.
- Allow the salmon to rest for 2-3 minutes before serving.
- Garnish with fresh herbs and serve with your favorite sides.
