  • Author: David
  • Total Time: 25 minutes
  • Yield: 4 servings 1x

Description

A delicious and elegant pistachio crusted salmon that’s perfect for both weeknight dinners and special occasions. This simple yet impressive dish combines the rich flavor of salmon with a crunchy, nutty pistachio crust.

Ingredients

Scale
  • 4 salmon fillets (68 ounces each, preferably wild-caught)
  • 1/2 cup shelled, unsalted pistachios, finely chopped
  • 2 tablespoons Dijon mustard
  • 1 tablespoon honey
  • 2 tablespoons extra virgin olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Pinch of paprika
  • Fresh herbs for garnish (parsley or dill)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Pat the salmon fillets dry with paper towels and place them on the prepared baking sheet. Season lightly with salt and pepper.
  3. In a small bowl, combine the crushed pistachios, Dijon mustard, honey, olive oil, minced garlic, lemon zest, lemon juice, and a pinch of paprika. Stir until it forms a thick paste.
  4. Spread the pistachio mixture evenly over the top of each salmon fillet, pressing gently to help it adhere.
  5. Bake in the preheated oven for 12-20 minutes, depending on the thickness of your fillets. The salmon is done when it flakes easily with a fork and reaches an internal temperature of 145°F.
  6. Allow the salmon to rest for 2-3 minutes before serving.
  7. Garnish with fresh herbs and serve with your favorite sides.

Notes

Choose fresh, high-quality salmon for the best results. The cooking time may vary depending on the thickness of your fillets – a good rule of thumb is to cook salmon for 4-6 minutes per half-inch thickness. This dish pairs wonderfully with roasted asparagus, wild rice pilaf, or a crisp arugula salad with lemon vinaigrette.
