Instructions

  2. Make the pumpkin spice mixture: In a medium saucepan, combine 1 cup of water, 1/2 cup of pumpkin puree, 2 tablespoons of sugar, and 1 teaspoon of pumpkin spice mix. Whisk the ingredients together over low heat until fully blended.
  3. Add the agar-agar: Sprinkle 2 teaspoons of agar-agar powder into the mixture while whisking continuously to prevent lumps. Bring the mixture to a gentle boil, then simmer for 2-3 minutes until it thickens slightly.
  4. Cool the mixture: Remove the saucepan from heat and let the mixture cool for about 5 minutes. It should still be liquid but not too hot to handle.
  5. Create the caviar pearls: Using a dropper or squeeze bottle, drip the pumpkin spice mixture into the cold oil. Tiny pearls will form instantly as the mixture hits the chilled oil.
  6. Strain the pearls: Carefully pour the oil and pearls into a fine mesh strainer over a bowl. Rinse the pearls with cold water to remove any residual oil.
