  • 1 teaspoon agar-agar powder
  • Vegetable oil (neutral oil like canola or grapeseed, chilled)
  • Optional: Maple syrup
  • Optional: Orange food coloring

Instructions

  1. Pour vegetable oil into a freezer-safe container and chill for at least 2 hours.
  2. In a small saucepan, combine water, pumpkin puree, pumpkin spice blend, sugar, and vanilla extract. Stir well.
  3. Sprinkle agar-agar powder over the mixture and whisk to combine. Let it sit for 5 minutes to hydrate.
  4. Place the saucepan over medium heat and bring the mixture to a gentle boil, stirring constantly. Cook for 2-3 minutes until the agar-agar dissolves completely.
  5. Remove the saucepan from heat and let the mixture cool for 3-5 minutes, ensuring it remains liquid.
  6. Using a pipette or syringe, carefully drop small amounts of the mixture into the chilled oil. The droplets will instantly solidify into pearls.
  7. Use a fine mesh sieve to scoop the pearls out of the oil. Rinse them gently with cold water to remove any residue.
  8. Transfer the pearls to a clean container. Use them immediately or store in the refrigerator for up to 5 days.

Notes

Ensure the oil is thoroughly chilled for proper pearl formation. Work quickly as the agar-agar mixture sets fast. Experiment with pearl sizes for different uses.
