  • 2 cups (200g) graham crackers, crushed into fine crumbs
  • 1/2 cup (115g) unsalted butter, melted
  • 2 tablespoons (25g) sugar
  • 16 ounces (450g) cream cheese, softened
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup (240g) pumpkin puree
  • 2 teaspoons pumpkin spice blend (cinnamon, nutmeg, ginger, cloves)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
  2. Crush graham crackers into fine crumbs and mix with melted butter and sugar. Press the mixture firmly into the bottom of the prepared pan to form the crust.
  3. In a mixing bowl, beat cream cheese until smooth. Add sugar, eggs, and vanilla extract, and mix until creamy.
  4. Stir in pumpkin puree and pumpkin spice blend to the cheesecake mixture. Blend until fully incorporated.
  5. Pour the cheesecake filling over the crust, spreading it evenly with a spatula.
  6. Bake for 40-45 minutes, or until the center is set but slightly jiggly.
  7. Allow the bars to cool completely at room temperature, then refrigerate for at least 3 hours before slicing.

Notes

For clean slices, dip your knife in warm water and wipe it clean between cuts. Let cream cheese and eggs come to room temperature for smoother blending. Avoid overmixing to prevent cracks in the cheesecake layer.
