Description

Ingredients

  • 1 cup (240g) pumpkin puree
  • 1 ¾ cups (350g) granulated sugar
  • ¼ cup (60ml) water
  • 1 teaspoon pumpkin spice blend
  • 2 tablespoons (30ml) fresh lemon juice
  • 1 pouch (85ml) liquid pectin

Instructions

  1. Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. In a heavy-bottom saucepan, combine pumpkin puree, granulated sugar, and water. Stir to mix.
  3. Cook the mixture over medium heat, stirring constantly with a silicone spatula, until the sugar is dissolved.
  4. Add pumpkin spice blend and fresh lemon juice. Stir well to incorporate.
  5. Bring the mixture to a boil, then reduce to a simmer. Add liquid pectin and stir continuously.
  6. Continue cooking until the mixture thickens and reaches 220°F (104°C) on a digital thermometer. This usually takes 10-15 minutes.
  7. Pour the hot mixture into the prepared baking pan, spreading it evenly with a spatula. Let it cool at room temperature for 2 hours, then refrigerate until fully set (about 4 hours).
  8. Once set, lift the pâte de fruit out of the pan using the parchment overhang. Slice into 1-inch squares or desired shapes.
  9. Roll each piece in granulated sugar to coat. Store in an airtight container at room temperature for up to 1 week.
