- 1 cup (90g) rolled oats
- 1 scoop (30g) vanilla protein powder
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon cinnamon
- Pinch of salt
- 1/2 cup (120g) pumpkin puree
- 1/2 cup (120g) almond butter
- 1/4 cup (60ml) maple syrup
- 1/4 cup (30g) chopped pecans
- 1/4 cup (40g) dark chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8 baking pan with parchment paper, leaving some overhang for easy removal.
- In a large mixing bowl, combine rolled oats, vanilla protein powder, pumpkin pie spice, cinnamon, and a pinch of salt. Stir well to evenly distribute the spices.
- In a separate bowl, whisk together pumpkin puree, almond butter, and maple syrup until smooth.
- Pour the wet ingredients into the dry mixture and stir until fully combined. The texture should be slightly sticky but firm.
- Fold in chopped pecans and dark chocolate chips, if using.
- Transfer the mixture into the prepared baking pan. Use a rubber spatula to press it down evenly and smooth the surface.
- Bake for 20-25 minutes, or until the edges are lightly golden and the center feels set when touched.
- Remove from the oven and let cool completely in the pan before slicing into bars.
- Store in an airtight container for up to 5 days or freeze for longer storage.
