- 2 cups (240g) all-purpose flour
- 1/2 cup (120g) granulated sugar
- 1/2 cup (60g) ground almonds
- 1 cup (225g) cold unsalted butter
- 3 large eggs
- 1 cup (240g) raspberry jam
- 1 teaspoon almond extract
- 1 cup (125g) fresh raspberries
- Powdered sugar for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or line it with parchment paper.
- In a mixing bowl, combine flour, granulated sugar, and ground almonds. Cut in cold butter until the mixture resembles coarse crumbs. Press this mixture firmly into the bottom of the prepared baking dish.
- Bake the crust for 15 minutes, or until lightly golden. Remove from the oven and let it cool slightly.
- In another bowl, whisk together eggs, raspberry jam, and almond extract. Fold in fresh raspberries.
- Spread the raspberry mixture evenly over the cooled crust.
- Return the dish to the oven and bake for 25-30 minutes, or until the filling is set and slightly bubbly around the edges.
- Allow the bars to cool completely before slicing them into squares or rectangles. Dust with powdered sugar for a beautiful finish.
Notes
For best results, use fresh raspberries if they’re in season. Let the crust cool slightly before adding the filling to prevent sogginess. Use a sharp knife and clean it between cuts for neat slices.
