Ingredients

  • 1/2 cup (100g) granulated sugar
  • 1/2 cup (113g) cold, cubed unsalted butter
  • 8 ounces (226g) cream cheese
  • 1/2 cup (60g) powdered sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 2 cups (250g) fresh raspberries

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan or line it with parchment paper.
  2. In a large bowl, combine 2 cups of all-purpose flour, 1/2 cup of granulated sugar, and 1/2 cup of cold, cubed butter. Use a pastry cutter or your hands to mix until the mixture resembles coarse crumbs. Reserve 1 cup of this mixture for the topping.
  3. Press the remaining crust mixture evenly into the bottom of the prepared baking pan. Bake for 12-15 minutes, or until lightly golden. Let it cool slightly.
  4. In a bowl, beat 8 ounces of cream cheese and 1/2 cup of powdered sugar together until smooth. Add 1 egg, 1 teaspoon of vanilla extract, and 1 tablespoon of lemon juice, and mix until well combined.
  5. Spread the cream cheese mixture over the cooled crust. Arrange 2 cups of fresh raspberries evenly over the top.
  6. Sprinkle the reserved crumb mixture over the raspberries, ensuring even coverage.
  7. Return the pan to the oven and bake for 25-30 minutes, or until the topping is golden brown and the filling is set.
  8. Let the bars cool completely at room temperature, then refrigerate for at least 2 hours before slicing.

Notes

For clean slices, use a sharp knife dipped in warm water and wipe the blade clean between cuts. Chilling the bars before slicing is crucial for neat pieces.
