- 1/2 cup (100g) granulated sugar
- 1/2 cup (113g) cold, cubed unsalted butter
- 8 ounces (226g) cream cheese
- 1/2 cup (60g) powdered sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 2 cups (250g) fresh raspberries
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan or line it with parchment paper.
- In a large bowl, combine 2 cups of all-purpose flour, 1/2 cup of granulated sugar, and 1/2 cup of cold, cubed butter. Use a pastry cutter or your hands to mix until the mixture resembles coarse crumbs. Reserve 1 cup of this mixture for the topping.
- Press the remaining crust mixture evenly into the bottom of the prepared baking pan. Bake for 12-15 minutes, or until lightly golden. Let it cool slightly.
- In a bowl, beat 8 ounces of cream cheese and 1/2 cup of powdered sugar together until smooth. Add 1 egg, 1 teaspoon of vanilla extract, and 1 tablespoon of lemon juice, and mix until well combined.
- Spread the cream cheese mixture over the cooled crust. Arrange 2 cups of fresh raspberries evenly over the top.
- Sprinkle the reserved crumb mixture over the raspberries, ensuring even coverage.
- Return the pan to the oven and bake for 25-30 minutes, or until the topping is golden brown and the filling is set.
- Let the bars cool completely at room temperature, then refrigerate for at least 2 hours before slicing.
Notes
For clean slices, use a sharp knife dipped in warm water and wipe the blade clean between cuts. Chilling the bars before slicing is crucial for neat pieces.
