Rich, gooey chocolate lava brownies cooked in a slow cooker, perfect for dessert and served warm with vanilla ice cream.

- 1 cup (200g) granulated sugar
- 1/2 cup (115g) unsalted butter, melted
- 2 large eggs, room temperature
- 1 teaspoon pure vanilla extract
- 1/3 cup (40g) unsweetened cocoa powder
- 1/2 cup (65g) all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1 cup (175g) semi-sweet chocolate chips
- 1/4 cup (60ml) heavy cream
- Vanilla ice cream (optional)
- Chopped nuts (optional)
- Caramel or chocolate syrup (optional)
Instructions
- Lightly grease the slow cooker insert with non-stick spray or line it with parchment paper.
- In a large bowl, whisk together the melted butter and sugar until smooth. Add the eggs and vanilla extract, mixing until fully combined. Stir in the cocoa powder, flour, salt, and baking powder until no lumps remain.
- Spread the brownie batter evenly in the slow cooker insert.
- In a microwave-safe bowl, combine chocolate chips and heavy cream. Microwave in 20-second intervals, stirring between, until smooth and melted.
- Pour the melted chocolate mixture over the brownie batter, spreading it gently. Do not mix.
- Cover the slow cooker with the lid and cook on low for 2.5 to 3 hours, or until the edges are set but the center is still slightly soft.
- Let the brownies cool for 10-15 minutes before serving. Scoop directly from the slow cooker into bowls and top with vanilla ice cream and your favorite toppings.
Notes
Keep an eye on the brownies during the last 30 minutes of cooking as slow cookers can vary in power. Serve warm with ice cream for the best experience.
