- 2 pounds boneless, skinless chicken thighs
- 1/2 cup honey
- 1/4 cup low-sodium soy sauce
- 2 tablespoons ketchup
- 2 tablespoons rice vinegar
- 4 cloves garlic, minced
- Pinch of black pepper
- Optional: red pepper flakes for heat
Instructions
- Pat the chicken thighs dry with a paper towel to help the sauce stick better during cooking.
- In a mixing bowl, whisk together honey, soy sauce, ketchup, rice vinegar, minced garlic, black pepper, and optional red pepper flakes.
- Place the chicken thighs in the slow cooker and pour the sauce evenly over them.
- Cover and cook on low for 6-7 hours or high for 3-4 hours until the chicken is tender and easily shreds with a fork.
- Optional: To thicken the sauce, remove the chicken and transfer the sauce to a saucepan. Simmer over medium heat and whisk in a cornstarch slurry (1 tablespoon cornstarch mixed with 1 tablespoon water) until it thickens.
- Return the chicken to the slow cooker or serve immediately with the thickened sauce poured over the top.
Notes
For extra depth, sear the chicken thighs in a hot pan for 2-3 minutes per side before placing them in the slow cooker. Adjust the sauce sweetness or saltiness to your liking before cooking.
