Ingredients

  • 2 pounds boneless, skinless chicken thighs
  • 1/2 cup honey
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons ketchup
  • 2 tablespoons rice vinegar
  • 4 cloves garlic, minced
  • Pinch of black pepper
  • Optional: red pepper flakes for heat

Instructions

  1. Pat the chicken thighs dry with a paper towel to help the sauce stick better during cooking.
  2. In a mixing bowl, whisk together honey, soy sauce, ketchup, rice vinegar, minced garlic, black pepper, and optional red pepper flakes.
  3. Place the chicken thighs in the slow cooker and pour the sauce evenly over them.
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours until the chicken is tender and easily shreds with a fork.
  5. Optional: To thicken the sauce, remove the chicken and transfer the sauce to a saucepan. Simmer over medium heat and whisk in a cornstarch slurry (1 tablespoon cornstarch mixed with 1 tablespoon water) until it thickens.
  6. Return the chicken to the slow cooker or serve immediately with the thickened sauce poured over the top.

Notes

For extra depth, sear the chicken thighs in a hot pan for 2-3 minutes per side before placing them in the slow cooker. Adjust the sauce sweetness or saltiness to your liking before cooking.
