Ingredients

  • 1.5 lbs boneless, skinless chicken thighs
  • 1/2 cup honey
  • 1/4 cup Sriracha
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • Green onions, chopped (for garnish)
  • Sesame seeds (optional, for garnish)

Instructions

  1. In a mixing bowl, whisk together honey, Sriracha, soy sauce, rice vinegar, minced garlic, and grated ginger.
  2. Place chicken thighs into the slow cooker, spreading them out evenly.
  3. Pour the honey-Sriracha mixture over the chicken, ensuring every piece is coated.
  4. Cover the slow cooker and set it to low for 6 hours or high for 3 hours. Avoid opening the lid during cooking.
  5. About 30 minutes before the chicken is done, whisk together cornstarch and water in a small bowl. Stir this mixture into the slow cooker to thicken the sauce.
  6. Once cooked, use tongs to transfer the chicken to a serving dish. Pour the thickened sauce over the chicken.
  7. Top with chopped green onions and sesame seeds for garnish.
