Description
These soft, buttery bars combine the warm cinnamon spice of snickerdoodles with the chewy, rich texture of a blondie. Perfect for cozy afternoons or holiday gatherings.
Ingredients
Scale
- 1 cup unsalted butter, softened
- 1 cup light brown sugar
- 1/2 cup granulated sugar
- 2 large eggs, room temperature
- 2 teaspoons vanilla extract
- 2 1/4 cups all-purpose flour
- 1 teaspoon cream of tartar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 tablespoons granulated sugar (for topping)
- 1 teaspoon ground cinnamon (for topping)
Instructions
- Preheat the oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving some overhang for easy removal.
- In a medium bowl, whisk together the flour, cream of tartar, baking soda, cinnamon, and salt. Set aside.
- In a large bowl, beat the softened butter, brown sugar, and granulated sugar until light and fluffy (about 2 minutes).
- Mix in the eggs one at a time, followed by the vanilla extract. Scrape down the bowl to ensure everything is combined.
- Gradually add the dry ingredients to the wet mixture, mixing just until combined. Avoid overmixing.
- Transfer the batter to the prepared pan, smoothing it into an even layer.
- In a small bowl, mix the granulated sugar and cinnamon for the topping. Sprinkle evenly over the batter.
- Bake for 25-30 minutes, or until the edges are golden and a toothpick inserted into the center comes out with a few moist crumbs.
- Let the blondies cool completely in the pan before lifting them out using the parchment paper. Cut into squares and enjoy.
Notes
Ensure your butter and eggs are at room temperature for smoother batter. Avoid overmixing to keep the blondies soft and chewy. Cool completely before cutting for clean squares.
