- 2 ½ cups (310g) all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- Pinch of salt
- ¾ cup (170g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- ¼ cup (50g) brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 1 tablespoon lemon zest
- 1 cup fresh strawberries, chopped
Instructions
- Preheat your oven to 350°F (175°C). Line your baking sheets with parchment paper. Wash, hull, and chop your strawberries into small pieces. Zest and juice your lemon.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large mixing bowl, beat the softened butter with granulated sugar and brown sugar until light and fluffy, about 2-3 minutes.
- Beat in the egg, vanilla extract, lemon juice, and lemon zest until well combined.
- Gradually add the dry ingredients to the wet mixture, mixing just until combined. Gently fold in the chopped strawberries.
- Using a cookie scoop or tablespoon, drop dough balls onto your prepared baking sheets, spacing them about 2 inches apart.
- Bake for 12-14 minutes, or until the edges are set and lightly golden.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
If the dough feels too soft because of the strawberries, chill it in the fridge for 15-20 minutes before scooping. Adjust sugar if strawberries are extra sweet.
