  • 1/2 cup vegetable stock or chicken stock
  • 1 tablespoon honey or maple syrup (optional)

Instructions

  1. Peel and cube the sweet potatoes into uniform pieces.
  2. In a medium saucepan, combine sweet potatoes, vegetable stock, and a pinch of salt. Bring to a boil, then reduce heat to simmer. Cook for 15-20 minutes until fork-tender.
  3. Drain the sweet potatoes, reserving about 1/4 cup of the cooking liquid.
  4. Transfer sweet potatoes to a blender or use an immersion blender. Add reserved cooking liquid, heavy cream, butter, cinnamon, and nutmeg. Blend until smooth and creamy. Adjust thickness with more cream or stock if needed.
  5. Strain the mixture through a fine mesh sieve into a heatproof bowl for a silky smooth texture.
  6. For professional foam texture, load the mixture into a whipping siphon and charge it according to the manufacturer’s instructions. Dispense onto a plate or serving dish.
  7. If no siphon is available, serve immediately as a soft mousse-like texture or whip further with a whisk for added airiness.
  8. Adjust seasoning as needed before serving.
