- 1 tablespoon unsalted butter

- 1/2 cup vegetable stock or chicken stock
- 1 tablespoon honey or maple syrup (optional)
Instructions
- Peel and cube the sweet potatoes into uniform pieces.
- In a medium saucepan, combine sweet potatoes, vegetable stock, and a pinch of salt. Bring to a boil, then reduce heat to simmer. Cook for 15-20 minutes until fork-tender.
- Drain the sweet potatoes, reserving about 1/4 cup of the cooking liquid.
- Transfer sweet potatoes to a blender or use an immersion blender. Add reserved cooking liquid, heavy cream, butter, cinnamon, and nutmeg. Blend until smooth and creamy. Adjust thickness with more cream or stock if needed.
- Strain the mixture through a fine mesh sieve into a heatproof bowl for a silky smooth texture.
- For professional foam texture, load the mixture into a whipping siphon and charge it according to the manufacturer’s instructions. Dispense onto a plate or serving dish.
- If no siphon is available, serve immediately as a soft mousse-like texture or whip further with a whisk for added airiness.
- Adjust seasoning as needed before serving.
Notes
Choose orange-fleshed sweet potatoes for the best flavor and color. Straining the mixture ensures a silky texture. Experiment with flavors like cayenne, vanilla, or herbs for customization.
