Ingredients
- 2 medium-sized sweet potatoes
- 1 cup (120g) cornstarch
- 1 cup (240ml) water
- Neutral oil (vegetable oil, canola oil, or avocado oil) for frying
- Sea salt to taste
- Optional seasonings: cinnamon, chili powder, or sugar
Instructions
- Wash and peel the sweet potatoes, then slice them as thinly as possible using a mandoline slicer or sharp knife.
- In a mixing bowl, combine 1 cup (120g) of cornstarch with 1 cup (240ml) of water. Whisk until completely smooth with no lumps.
- Dip each sweet potato slice into the cornstarch mixture, ensuring a thin, even coating. Shake off any excess liquid before frying.
- In a heavy-bottomed pan, heat about 2 inches (5cm) of neutral oil to 325°F (163°C). Use a kitchen thermometer for accuracy.
- Fry the slices in small batches to prevent overcrowding. Each chip should take about 1-2 minutes to crisp up. Flip them halfway through for even frying.
- Use a slotted spoon to transfer the chips to a cooling rack lined with paper towels. Sprinkle with sea salt while they’re still warm.
- Let the chips cool completely before serving. They’ll become even crispier as they cool.
