  • 1 cup sauerkraut, drained
  • 1 teaspoon caraway seeds
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced (optional)
  • Salt and pepper, to taste
  • Fresh parsley, optional, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Line a sheet pan with parchment paper for easy cleanup.
  2. Peel and dice the sweet potatoes into bite-sized cubes. Toss them in 1 tablespoon of olive oil, a pinch of salt, and pepper. Spread them evenly on the sheet pan.
  3. Roast the sweet potatoes for 20-25 minutes, tossing halfway through, until they’re golden brown and tender.
  4. While the sweet potatoes are roasting, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the minced garlic and cook for 1 minute until fragrant.
  5. Stir in the sauerkraut and caraway seeds, cooking for 5-7 minutes until the sauerkraut warms through and slightly softens.
  6. Once the sweet potatoes are done, transfer them to the skillet with the sauerkraut. Gently toss everything together until well combined.
  7. Taste and adjust with more salt and pepper as needed.
  8. Transfer to a serving dish, sprinkle with fresh parsley if desired, and enjoy warm.
