- 1 medium-sized sweet potato, roasted and mashed
- 1 cup (120g) all-purpose flour
- 2 tablespoons (30ml) olive oil
- 1/4 teaspoon salt
- 2 tablespoons (20g) sesame seeds
- Optional spices: paprika or garlic powder
Instructions
- Roast one medium-sized sweet potato at 400°F (200°C) until tender (about 40 minutes). Let it cool, then peel and mash.
- In a mixing bowl, combine 1 cup (120g) of all-purpose flour, 1/2 cup (120g) mashed sweet potato, 2 tablespoons (30ml) olive oil, and 1/4 teaspoon of salt. Mix until a dough forms. If it’s too sticky, add a bit more flour.
- Fold in 2 tablespoons (20g) of sesame seeds. You can sprinkle a few extra on top for decoration.
- Place the dough on a lightly floured surface and roll it out to about 1/8-inch thickness.
- Use a knife or cracker cutter to slice the dough into your desired shapes. Transfer them to a parchment-lined baking sheet.
- Preheat your oven to 350°F (175°C). Bake the crackers for 15-18 minutes, or until golden and crisp. Keep an eye on them to prevent burning.
- Let the crackers cool completely before serving. Store leftovers in an airtight container.
