  • 1 cup water
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Cook the Cranberries: In a medium saucepan, combine cranberries, sugar, and water. Bring to a boil over medium heat, stirring occasionally, until the cranberries burst and release their juices (about 10 minutes).
  2. Strain the Mixture: Carefully pour the cooked cranberry mixture through a fine-mesh strainer into a bowl, pressing gently to extract all the liquid. Discard the solids.
  3. Prepare the Gelatin: In a small mixing bowl, sprinkle the gelatin over 1/4 cup (60 ml) of cold water and let it bloom for 5 minutes. Then, add 1/2 cup (120 ml) hot chicken consommé to dissolve the gelatin, whisking until smooth.
  4. Combine Ingredients: In a large mixing bowl, combine the cranberry liquid, dissolved gelatin, remaining consommé, lemon juice, and orange zest. Stir until fully mixed.
  5. Mold the Aspic: Pour the mixture into an aspic mold or serving dish. Cover with plastic wrap and refrigerate for 4-6 hours, or until fully set.
  6. Unmold and Serve: To unmold, dip the mold briefly in warm water and invert onto a serving platter. Garnish with fresh mint leaves if desired.
