This cranberry consommé aspic is a stunning centerpiece that combines sweet-tart cranberries with refined consommé for a dish that’s as beautiful as it is delicious.

- 12 ounces fresh cranberries
- 2 cups low-sodium chicken consommé
- 2 envelopes unflavored gelatin (about 4 teaspoons)
- 1 cup granulated sugar
- 2 tablespoons fresh lemon juice
- 1 teaspoon orange zest (optional)
- 1 cup water
- Fresh mint leaves for garnish (optional)
Instructions
- Cook the Cranberries: In a medium saucepan, combine cranberries, sugar, and water. Bring to a boil over medium heat, stirring occasionally, until the cranberries burst and release their juices (about 10 minutes).
- Strain the Mixture: Carefully pour the cooked cranberry mixture through a fine-mesh strainer into a bowl, pressing gently to extract all the liquid. Discard the solids.
- Prepare the Gelatin: In a small mixing bowl, sprinkle the gelatin over 1/4 cup (60 ml) of cold water and let it bloom for 5 minutes. Then, add 1/2 cup (120 ml) hot chicken consommé to dissolve the gelatin, whisking until smooth.
- Combine Ingredients: In a large mixing bowl, combine the cranberry liquid, dissolved gelatin, remaining consommé, lemon juice, and orange zest. Stir until fully mixed.
- Mold the Aspic: Pour the mixture into an aspic mold or serving dish. Cover with plastic wrap and refrigerate for 4-6 hours, or until fully set.
- Unmold and Serve: To unmold, dip the mold briefly in warm water and invert onto a serving platter. Garnish with fresh mint leaves if desired.
